We love salads! Here's why we like to eat raw foods: 
1. They contain enzymes that facilitate digestion and absorption of nutrients,
 2. They are usually rich in fiber, which promotes intestinal transit and microbiome health. 3. They have many antioxidants that help combat oxidative stress.
 I bet you didn't know! So enjoy all the benefits of salads.
INGREDIENTS:
- 1 generous handful of lettuce
- 1/4 red pepper (if it doesn't agree with you raw, you can eat it baked and without skin).
- 1/4 of spring onion
- 1/2 ripe avocado
- 1 small can of bonito in olive oil (60-70 g drained)
- 1 tablespoon of natural mixed nuts
- 1 tablespoon of extra virgin olive oil
- 1 teaspoon apple cider vinegar, balsamic vinegar, or lemon juice
- Sea salt and pepper to taste
STEPS:
- Wash and dry the lettuce well. Place it in a bowl or deep plate as a base.
- Cut the red pepper and spring onion into strips or cubes.
- Open and dice the avocado.
- Add the shredded and drained bonito on top.
- Add the mixed nuts (you can toast them in a pan for a minute to enhance their flavor).
- Dress with olive oil, vinegar or lemon, salt and pepper.

Mix everything gently and serve immediately.
 
TIP: Have the vinaigrette ready for both days of salads.
