Zucchini crepes

This is the recipe for zucchini crepes.

ingredients

  • 3 zucchini
  • 2 eggs
  • Spices to taste (garlic powder, oregano...)
  • Toppings (tomato or dried tomato, cheese (little and goat/sheep), turkey or shredded chicken, avocado, pepper...)

Steps

  • Wash and dry the zucchini. Grate it with skin and put it on a kitchen towel. Wring it out well with the help of the cloth until all the water is released.

  • Mix the zucchini with the eggs until it becomes a dough and spread very thinly on a baking tray covered with oiled parchment paper. Put the tray in the oven preheated to 200º for 20 minutes until the dough is golden brown.

  • Finally, fill with the toppings you like the most, roll up to form a crepe and put the crepe back in the oven for 5 minutes.

TIP: We love the sea version with salmon or anchovies
