This is the recipe for zucchini crepes.

- 3 zucchini
- 2 eggs
- Spices to taste (garlic powder, oregano...)
- Toppings (tomato or dried tomato, cheese (little and goat/sheep), turkey or shredded chicken, avocado, pepper...)

Wash and dry the zucchini. Grate it with skin and put it on a kitchen towel. Wring it out well with the help of the cloth until all the water is released.

Mix the zucchini with the eggs until it becomes a dough and spread very thinly on a baking tray covered with oiled parchment paper. Put the tray in the oven preheated to 200º for 20 minutes until the dough is golden brown.

Finally, fill with the toppings you like the most, roll up to form a crepe and put the crepe back in the oven for 5 minutes.
