This is the recipe for turnip omelette
ingredients
- 3 large turnips
- ½ red onion or leek
- 4 eggs
- Salt
Steps
- 
Peel and cut the turnips into fine pieces. 
- 
Cut the onion into very fine julienne strips. 
- 
 Fry the turnip with EVOO and after 5 minutes add the onion. Let it cook a little golden brown. 
- 
Beat the eggs with the salt. Drain the onion and turnip with a slotted spoon and add to a bowl with the beaten egg. 
- 
Let it rest for 20-30 minutes (key). 
-
