Turnip omelette

This is the recipe for turnip omelette

ingredients

  • 3 large turnips
  • ½ red onion or leek
  • 4 eggs
  • Salt

Steps

  • Peel and cut the turnips into fine pieces.

  • Cut the onion into very fine julienne strips.

  • Fry the turnip with EVOO and after 5 minutes add the onion. Let it cook a little golden brown.

  • Beat the eggs with the salt. Drain the onion and turnip with a slotted spoon and add to a bowl with the beaten egg.

  • Let it rest for 20-30 minutes (key).

  • In a very hot non-stick paella pan, cook 3 minutes on each side.

TIP: This is an alternative to the potato omelet that we love. You can add peppers.
