Cream of cauliflower soup doesn't sound very appetizing at first glance, but trust us, we've tried it at home and everyone loves it. You'll love both the cold summer cream of cauliflower soup and the hot one.
INGREDIENTS
- 2 finely chopped onions
- 1 medium cauliflower
- 1 bay leaf
- 5 cm of kombu or wakame seaweed (optional)
- Olive oil and salt
- 300 ml Cooldo Bone Broth or water-bone broth mix
- Sesame seeds
STEPS
- Sauté the onions with a dash of oil, salt and pepper for 15 minutes over low heat.
- Add the cauliflower, bay leaf, seaweed, and bone broth (or broth and water) until it covers 1/3 of the vegetables. Simmer for 20 minutes.
- Remove the bay leaves and seaweed and blend the ingredients until you get a creamy texture, adding water little by little until you get the desired texture.
