This is the recipe for stuffed eggplants.
ingredients
- 2 eggplants
- 1 large chicken breast/ 200 g minced meat
- Crumbled feta cheese
- 1 red pepper
- 1 green pepper
- 1 red onion
- 6 fresh or jarred tomatoes
- 5 tablespoons EVOO
- Salt, pepper and oregano
Steps
- 
 Cut the eggplants in half and make small squares in the meat (so that they cook well inside), add a splash of EVOO, a pinch of salt and put them in the oven for approx. 30 minutes (or if you're in a hurry, 15 minutes in the bus). 
- 
Take the eggplants out of the oven and empty them, trying not to break the skin (which will be used to fill). Save both the skin and the meat. 
- 
Chop all the vegetables into small cubes and sauté in a saucepan with 4 tablespoons of EVOO, salt, pepper and oregano until the vegetables are soft (approx. 15 min.). 
- 
Add the eggplant meat and the chicken cut into strips/minced meat and sauté for about 10 minutes. Fill the eggplants with this mixture. 
-
