Did someone say curry? You may have noticed that we love curry! This is a simple curry prawn dish.
INGREDIENTS:
- 250g whole raw frozen or fresh shrimp
- 1 onion
- 1 garlic
- 1 can of coconut milk
- curry powder
- 1 piece of ginger (2cm)
- Pinch of salt
- Pinch of pepper
STEPS:
- If the prawns are fresh, I recommend that you previously sauté the prawn heads in the oil in which you are going to sauté the onion and remove them so that the oil absorbs all the flavor of the prawns.
- Sauté the chopped onion and filleted garlic with a little EVOO. When it is poached, add the grated or chopped ginger and the curry. Stir 1 minute.
- Peel the tails of the shrimp and add the curry mixture. Stir until the prawns are well coated with the spices.
- Add the coconut milk, salt and pepper to taste. When it comes to a boil, lower the heat to minimum, cover it and let the liquid simmer until you have a thick sauce.
TIP: This recipe is ready in 15 minutes. Add fresh cilantro to serve and accompany it with basmati rice.
