To eat vegetables you have to have them prepared in advance because they are easy to make but take time. Once made, you can keep them in a glass container with a splash of oil and they keep well in the refrigerator.
INGREDIENTS:
- 1 large eggplant
- 1 onion
- 2 peppers (if it doesn't suit you, don't add it)
STEPS:
- 
 Preheat the oven to 200 degrees for 10 minutes while covering the oven tray with baking paper. 
- 
Wash the vegetables and place them on top of the baking paper except for the pepper, which you must wrap in baking paper before placing it on the paper. 
- 
Add the vegetables and leave them at 200 degrees for 10 minutes. As soon as this time has passed, remove the baking paper from the peppers and lower the oven temperature to 170 degrees. Let them roast for about 40 minutes. 
- 
You have to watch and if you see that they turn black, you turn them over. As soon as they are soft and done, take them out of the oven, let them cool and peel them.
