If you are looking for a light dinner idea, this recipe with zucchini can be eaten all year round.

INGREDIENTS:
- 1 zucchini (raw, grilled or baked).
- 1 tomato
- 1 handful of walnuts, pine nuts or pumpkin seeds
- Chopped parsley or cilantro (whatever you like best or vary it)
- Juice of 1/2 lemon
- extra olive oil
- Salt and pepper.
STEPS:
- Cut the zucchini into very thin slices. In summer zucchini is very delicious raw and in winter you can fry it or bake it.
- Peel the tomato and mash it with a fork. Add a little oil and salt.
- Crush the seeds you have chosen or have on hand with the help of a mortar.
- Place the zucchini slices scattered on the plate, add the rest of the ingredients. The tomato, for example, in the center, and the seeds scattered around the plate. Don't forget the splash of lemon juice, oil, salt and pepper to taste.
