We love this cream because in addition to including extra nutrients thanks to adding Cooldo, it is a great option to reduce inflammation. Don't hesitate to use this anti-inflammatory carrot cream as a light option for dinner or accompany it with a salad at midday.
INGREDIENTS
- 8-10 carrots
- 4 or 5 onions
- 1-2 leeks
- 500ml of water
- 2 cloves of garlic (optional)
- Salt, pepper, EVOO
- 300ml of Cooldo
STEPS
- Sauté the onion - without oil - in a frying pan over low heat. It will release its own water.
- Add the sliced carrots and leeks. Also garlic if you decide to include it. Let it cook for about 5 minutes.
- Add the water. Let it cook until the carrots are soft - about 20 minutes.
- A few minutes before turning off the heat, add the broth so it doesn't evaporate.
