NICOISE SALAD

We love salads at any time of the year. This Nicoise salad is very filling, making it a single dish or to be accompanied by one or half portions of broth.

INGREDIENTS:

  • 150g cooked green beans
  • 50g lamb's lettuce
  • ½ onion cut into julienne
  • 1 ripe tomato cut into cubes
  • 150g mackerel
  • 1 hard-boiled eggs
  • 4 anchovies
  • 1-2 prebiotic potatoes* peeled and cut into squares
  • 2 dried tomatoes (optional)
  • 8 black olives (optional)
  • 1 teaspoon capers (optional)
  • Vinaigrette:

    • 1 tablespoon balsamic vinegar
    • 3 tablespoons extra virgin olive oil
    • 1 teaspoon Dijon mustard

STEPS:

  • Mix the salad ingredients.

  • Whisk together the vinaigrette ingredients and pour it over the top.

  • You can add seeds or some dried fruit on top.

TIP: Remember the importance of making the potatoes/sweet potato in advance. You can also have the vinaigrette made in advance, store it in the refrigerator in an airtight glass jar for overnight use. It can last 3/4 days when cold.
